Ingredients
Crust Option 1 – Biscuit Base

250 g dry biscuits (digestive biscuits, graham crackers, etc.)

Crust Option 2 – Oreo Base

25 Oreos
-
70 g melted butter
Cheesecake Filling

250 mL heavy cream
-
500 g cream cheese, room temperature

150 g caster sugar
-
60 g sour cream
-
1 Tbsp lemon juice
-
1 tsp vanilla extract
Optional (for extra stability)

10 g powdered gelatin
-
2 Tbsp cold water
Step 1: Prepare the Crust
Start by making the biscuit base for your cheesecake.
Place your biscuits or Oreos into a food processor and pulse until they form a fine crumb.

Pour in the melted butter and mix until fully combined.
The mixture should resemble wet sand.
If it looks too wet or greasy, simply add a few more crushed cookies to balance it.
Next, pour the mixture into the Frost Form liner.

Using a tall glass or flat-bottomed cup, press the crumb mixture firmly:

across the bottom of the pan

slightly up the sides of the liner
This helps create a sturdy base that holds the cheesecake filling.

Place the crust in the refrigerator while preparing the filling so it can firm up.

Step 2: Prepare the Cheesecake Filling
In a large bowl, combine:

cream cheese, softened

sour cream

caster sugar
-
lemon juice
-
vanilla extract
Mix using a hand mixer or rubber spatula until smooth and well combined.
Tip for Smooth Cheesecake
If your cream cheese feels too firm, you can soften it in the microwave.
Microwave in 15-second bursts, stirring between each interval, until the cream cheese is soft but not melted.
This helps create a much smoother filling, especially when pouring into the Frost Form.
Step 3: Whip the Cream
In a separate large bowl, beat the heavy cream until it reaches soft peaks.

Step 4: Combine the Filling

Optional: Add Gelatin for Extra Stability
If you want a firmer cheesecake, especially for warmer environments or transport, you can add gelatin.

Sprinkle 10 g powdered gelatin over 2 Tbsp cold water.

Let it bloom for about 5 minutes.

Microwave briefly until fully dissolved (about 5–10 seconds). Let cool for a few minutes.

Stir the melted gelatin into the cream cheese mixture before adding it to the whipped cream.
- If the gelatin hardens, you can microwave the cream cheese mixture in 10-second bursts until the gelatin has melted and incorporated well.
This step is optional but can help the cheesecake set more firmly.
Note: it will have a more gelatin-like consistency and be slightly less creamy.
Step 5: Fill the Frost Form
Remove the prepared crust from the refrigerator.
Pour the cheesecake filling into the crust and smooth the top by tapping the form on the counter or using a Frost Finisher.
Place the cheesecake in the refrigerator and allow it to set for at least 4 hours, or ideally overnight.

Step 6: Remove the Frost Form
Once the cheesecake is fully set:

Remove the former of the Frost Form kit.

Gently peel away the liner.
- Slide a bent edge palette knife under the crust to transfer it to a cake stand or cake board.
